Each cow only has about 24 ribeye steaks and 24 t-bone steaks. That's it! Everybody wants t-bones and ribeyes (including us) so they come at a premium... but they're worth it!
1" thick steaks are approximately 20 ounce cuts, 3/4" thick steaks are approximately 15 ounce cuts, and 1/2" thick steaks are approximately 10 ounce cuts, though there may be some slight variation due to the frame size of each animal.
